8 ounces smoked catfish fillet, broken into small pieces
4 ounces cream cheese
2 tablespoons unsalted butter
1 to 1 1/2 tablespoons milk
2 teaspoons minced onion
1 1/2 teaspoons brandy
1 teaspoon fresh lemon juice
1/4 teaspoon hot pepper sauce
Salt and freshly-ground black pepper, to taste

Place all ingredients in the bowl of a food processor or mixer, and mix well. Pack the mixture into a small serving bowl, and refrigerate the mixture, covered, at least 30 minutes and as long as 48 hours.

Serve the spread with crackers or bread.
