1 cup oil

1/4 cup Balsamic vinegar

1/4 cup orange juice

1 tbsp. orange concentrate

1 tsp. garlic, pared, minced

1 tsp. shallots, pared, minced

1 tsp. pepper

6 oz. mixed field greens

2 plum tomatoes, concassee, cut into

tear shape

Combine oil, vinegar, orange juice, orange concentrate, garlic, shallots and pepper in sauce pan. Heat until hot; reserve warm. Arrange greens and tomato concassee on plates; refrigerate.
