1/2 cup sesame seeds, toasted

1/4 cup olive oil

1 eggplant, pared, seeded, charred

3 garlic cloves, pared, minced

2 oz. lemon juice

1 lb. unsalted butter, cut into pieces

1/4 cup cilantro, minced

salt and pepper, to taste

Place sesame seeds and olive oil in blender or food processor; puree to form a paste. Add eggplant, garlic and lemon juice; blend. Add butter; blend until smooth. Blend in seasonings. Portion mixture onto sheets of plastic wrap; roll to form logs. Refrigerate until chilled.
