6 tbsp. onions, pared, diced small

6 tbsp. coriander, fresh, chopped

3 tbsp. light brown sugar, firmly packed

1 tsp. black pepper, coarsely ground

4-1/2 tbsp. garlic, pared, minced

1/4 tsp. red-pepper sauce

9 tbsp. lemon juice

6 oz. low-sodium soy sauce

3 pork tenderloins, well trimmed, (12 oz. each)

Combine all ingredients except pork; mix well. Place pork in glass dish; pour marinade over. Cover; refrigerate for 4 to 5 hours. Place pork on wire rack in sheet pan; slow roast at 250 degrees F for 1 to 1-1/2 hours or until pork reaches internal temperature of 150 degrees F. Pork also can be broiled or grilled.
