Cucumber Dressing

2 cups cooked sugar snap peas (about

12 ounces)

1/2 cup shredded carrot (about

1 small)

6 Bibb lettuce leaves

Sugar snap peas used to be a fleeting delight, found only in the summer. With availability of frozen sugar snaps, this can be a year-round treat.

Prepare Cucumber Dressing in large glass or plastic bowl. Mix in peas and carrot. Cover and refrigerate about 2 hours or until chilled. Serve on lettuce leaves. 6 servings
