1/2 cup uncooked brown rice

1-1/2 cups chicken broth

1 cup finely chopped apple (about

1 medium)

1/3 cup raisins

1/4 cup finely chopped onion (about

1 small)

1/4 cup lemon juice

2 tablespoons chopped fresh parsley

1 teaspoon grated lemon peel

2 tablespoons frozen (thawed) apple

juice concentrate

1/2 teaspoon pepper

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

Cook rice as directed on package--except substitute broth for the water and omit salt. Toss rice and remaining ingredients in glass or plastic bowl. Cover and refrigerate about 2 hours or until chilled. 6 servings
