2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 1/2 cups granulated sugar
1 1/2 cup butter-flavored oil
3 eggs, beaten
2 teaspoons vanilla extract
2 1/2 cups grated carrots
1 cup chopped pecans or raisins

Mix and beat together all ingredients except carrots and pecans or raisins. Fold in carrots and pecans and pour into a well greased 9 x 5-inch loaf pan. Bake at 300 degrees F for 1 hour.
