Taunt Emmas Pear Preserves

4 lbs. hard pears (about

10 pears, de-stemmed, peeled, cored and cut

into eighths)

4 cups sugar

1/4 cup water

1/2 lemon (thinly sliced and seeded)

1 tsp. vinegar

VARIATION--add

4 oz. pineapple chunks (drain juice)

Place above ingredients in a heavy 3 quart pot. Cook on a medium flame for 10 minutes. Stir occasionally. Sugar will turn into liquid. Lower heat and simmer uncovered, for 2 to 3 hours. Stir occasionally.

When done, let cool. Spoon pears into jars. Cover pears with syrup. Store in refrigerator.

To preserve pears for a long time, follow directions for preserving on preserve jars. Use remaining syrup for pancakes, waffles, or Lost Bread. Makes 3 cups pears and 3 cups syrup.
