Steves One Step Chicken BurritosSteve 07/26/05 Two or more chicken breasts, cubed Frozen chopped spinach 1 16 oz. can of refried beans 1 box Betty Crocker Chicken Helper: Cheesy Chicken Enchilada flavor 1/2 cup of milk 1 Tbsp butter 1-2 Tbsp olive oil (or other, your preference) 1 small/medium onion chopped 1/2 to 1 small zucchini chopped 1/2 to 1 bell pepper chopped Cayenne pepper (optional) Garlic salt (optional) Frank\'s Red Hot Xtra Hot hot sauce, or your favorite hot sauce (optional) Package of flour tortilla\'s, or your favorite
Fry cubed chicken breasts in 1-2 Tbsp olive oil (or your own favorite oil). Season chicken with garlic salt and cayenne if desired. Drain if necessary. Follow directions on the box of Chicken Helper (adding the water, butter, milk, rice and sauce mix, bring to boil, simmer). During the 12 minute simmer process add chopped bell pepper, zucchini and onion. Add spinach toward the end of the simmer (no set measurement, just as much as desired). Add refried beans and a half can (8 oz.) of water. Mix all ingredients. Season with cayenne and hot sauce to taste. Remember to stir frequently. Simmer until vegetables are to desired tenderness. Microwave flour tortilla\'s one at a time in the microwave for 30 seconds, covered with a damp paper towel. Fill your tortilla with the chicken goodness, then top with cheese.
