Spicy Apple Cake

1/3 cup boiling water

2 cups (approx 2 medium) finely chopped pared apples

2 cups all-purpose flour*

1 1/2 cups sugar

1 1/4 tsp baking soda

1 tsp salt

1 tsp ground cinnamon

1 tsp ground nutmeg

1 tsp ground cloves

1/2 cup vegetable oil

3 eggs

1 tsp vanilla

1 cup chopped nuts

*If using self-rising flour, decrease baking soda to 1/2 tsp and omit salt

Pour boiling water in apples in a large mixing bowl; then let it stand for 1 hour.

Heat oven to 350 degrees. Grease and flour oblong pan, 13x9x2 inches. Beat

apples and remaining ingredients on low speed, scraping bowl constantly, 1 minute.

Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan.

Bake until wooden pick inserted in center comes out clean, 45-50 minutes; cool. Frost with Lemon flavor frosting.
