Roast Beef

1-1/2 tsp. salt (for beef)

1-1/2 tsp. black pepper (for beef)

3 to

4 lb. bottom round roast beef

1 cup water

GRAVY

3/4 cup water

1/4 tsp. salt

1/4 tsp. black pepper

Preheat oven to 350 degrees. Mix salt and pepper in a cup. Rub mix on all sides of beef. Place beef in a heavy pan uncovered. Add 1/2 cup water to bottom of pan. Cook in a 350 degree oven for about 1-1/2 hours. After the first hour, add 1/2 cup water to bottom of pan. When done, the inside center portion of the meat should be medium rare. If necessary, cook longer to desired point. Place roast on hot serving platter. Reserve juices in the pan.

GRAVY

Add water, salt and pepper to juice in pan. Scrape bottom of pan with a spatula. Pour gravy into a saucepan. Heat for a few minutes over a medium flame.

TO SERVE

Slice hot Roast Beef into thin slices and pour hot gravy on top.
