Kentucky Cream CakeFrom the kitchen of Judy/AZ 1/2 cup shortening Cream shortening, margarine and sugar. Add egg yolks, one at a time, beating after each addition. Add flour and baking soda, alternately with buttermilk. Add vanilla, coconut and nuts. Beat egg whites until stiff and fold into batter. Bake in 2 or 3 (8 x 8 x 2-inch) layers in preheated 350 degree F oven for 35 to 40 minutes. Kentucky Cream Cake Frosting Cream the cream cheese, margarine, sugar and vanilla extract.
