Healthy Meat LoafAnonymous Fri Oct 07 11:33:28 2005 3/4 pound lean ground turkey 3/4 pound extra-lean ground beef 3/4 cup chopped onion (about 1-1/2 medium) 1/2 cup fresh bread crumbs 1 tablespoon tomato puree or ketchup 2 teaspoons Dijon mustard 1/2 teaspoon salt 1/4 teaspoon white pepper 1/8 teaspoon ground nutmeg 1/8 teaspoon Worcestershire sauce 2 egg whites or 1/4 cup cholesterol-free egg product 1 clove garlic, finely chopped This meat loaf has been updated for today\'s tastes. Ground turkey replaces half of the beef, and egg whites (or cholesterol-free egg product) fill in for a whole egg. And as always, leftover meat loaf makes a great sandwich. Heat oven to 375 degrees. Spray loaf pan, 8-1/2 X 4-1/2 X 2-1/2 inches, with nonstick cooking spray. Mix all ingredients. Spread evenly in pan. Bake about 1 hour or until no longer pink in center.
