Fresh Berries with Mascarpone GratinAnonymous Fri Oct 07 11:28:26 2005 1 cup egg yolks 4 oz. sugar 3 gelatin leaves water as needed 4 tbsp. brewed espresso 2 tbsp. sweet Marsala 3 oz. mascarpone cheese cinnamon to taste nutmeg to taste 3/4 pt. raspberries 3/4 pt. blackberries Warm egg yolks and sugar to 110 degrees F; whip to 5-second ribbon. Dissolve gelatin in water in sauce pan; add espresso and marsala. Heat until hot. Fold mascarpone into egg yolks. Temper with small amount of gelatin mixture; add remaining mixture.
