Edith s Sweet Potato Souffle (8x8 Pan)Anonymous Tue May 23 19:42:07 2006 3 cups mashed cooked sweet potatoes 3 eggs 1 cup sugar -- (or 1/2 cup) 1 tablespoon vanilla 1 stick melted butter ***TOPPING*** 1/2 stick margarine 1/2 cup self rising flour 1/2 cup brown sugar 1/2 cup nuts -- (pecan-walnuts) Mix together first five ingredients and pour into a pan sprayed with Pam. Mix together topping ingredients with hands until crumbly. Bake at 350F until top is brown and crisp. Ingredients are doubled for a 9x13 pan.
