Baked Flounder Teriyaki

6 small flounder or other lean fish

fillets (about

1-1/2 pounds)

1/3 cup dry sherry or apple juice

3 tablespoons lemon juice

2 tablespoons chopped green onions

2 teaspoons finely chopped gingerroot

2 teaspoons honey

1 teaspoon vegetable oil

1/4 teaspoon pepper

2 cloves garlic, finely chopped

Spray rectangular pan, 13 X 9 X 2 inches, with nonstick cooking spray. Place fish fillets in pan. Mix remaining ingredients; spoon over fish. Cover with aluminum foil and refrigerate 1 hour.

Heat oven to 375 degrees. Bake covered 15 to 20 minutes or until fish flakes easily with fork. 6 servings
