Alaska Salmon Special

Bob Hites

1/4 cup soy sauce

1/4 cup sherry

1 teaspoon minced garlic

1 teaspoon grated fresh ginger

4 6 to 8 oz salmon fillets

1/4 cup butter, softened

1 tbsp. minced shallot

1 teaspoon chopped parsley

Combine soy sauce, sherry, garlic and ginger in flat dish or gallon-size sip-top plastic bag.

place alaska salmon in marinade; turn several times to coat. Cover, if needed, and refrigerate

for 1 hour, turning salmon over after 30 minutes. Preheat broiler/oven or grill to medium-high heat.

Cream butter with shallot and parsley; cover and set aside.

Place salmon on a spray-coated broiling pan or well-oiled grill and cook 6 to 12 minutes per

inch of thickness, turning once during cooking. Do not overcook. Ser with dollop of seasoned butter
